Gluten-Free Pancakes

Combine 1 cup of gluten-free flour blend, 2 tablespoons of sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda in a bowl.

Whisk in 1 cup of buttermilk, 2 tablespoons of melted butter, and 1 egg until smooth.

 Let the batter rest for 5 minutes to thicken.

Heat a non-stick skillet or griddle over medium heat and lightly grease it.

 Pour 1/4 cupfuls of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.

Repeat with the remaining batter.

Serve hot with your favorite toppings like fruit, honey, or yogurt.
